Christmas in July Cherry Cheesecake

We went to a Christmas in July Party on the weekend, which is an annual tradition for one of our friends. Our friend goes all out, decorating her entire house (i'm talking large inflatable snow globe out front, Santa flag flying and of course a tree and lights). The best part of the evening was when a little boy walking by with his mom and dad exclaimed "Mommy, why are they pretending it's Christmas?"

I was one of many on dessert duty, and went with a very simple cherry cheesecake. This is my grandmother's recipe and when I say simple...I mean simple. It's not officially no bake because you have to to bake the crust, but it's pretty darn close. 



Eileen's Cherry Cheesecake
1 and 1/4 cup graham cracker crumbs
6 Tbsp butter or margarine melted
1/4 cup sugar
8oz cream cheese softened
1 cup icing sugar
1 tub cool whip
I can cherry pie filling

Mix graham crumbs, sugar and butter. Press into pan, bake at 325 for 8-10 minutes. Cool

Blend cream cheese with icing sugar until smooth. Fold in cool whip. Spread over cooled base. Spread pie filling on top.
